Fiesta Chicken:

4 chicken breasts ( fish filets)
16 oz Mounsier Papa Mango Nectar
1 fresh mango, diced
1/2 white onion, sliced
1/2 green bell pepper, sliced
Fresh cilantro, finely chopped
Cajun spice or blackening seasoning

Rub chicken with cajun spices and tenderize with a fork. Place each seasoned chicken breast on a large piece of foil. Add onions, peppers, mango, and cilantro on top of chicken and pour Mounsier Papa Mango Nectar over chicken. Wrap foil and bake in oven at 350 for 25-30 min. or until chicken is done. Serve over white or jasmine rice.
